Thick filleting knife 170mm SheffieldThis filleting knife feature a thick and stiff blade, good distal taper, flat heel, with thin tip. Shop made san ma with Spicy white 26C3 steel core and damascus cladding. Forged to shape and to geometry the bevels are ground on water cooled grinding stone with a satin finish. The handle is made with Bog Oak. Specs : Hagane : Spicy white 26C3 Jigane : Damascus with 1070 15n20 Blade length : 170mm Blade height at heel : 25mm Blade thickness : 5mm 4mm

- Balance point : at the pinch grip- Weight : 185gr- Finish : clean hira with blasted satin bevels

This grade is no longer used in industry and is becoming rare on the European market
